Take Back the Kitchen: Alma’s Easy and Quick Lasagna

Sometimes we forget the old classics when we need a quick dinner. I made this semi-homemade recipe that was a crowd pleaser and very quick to prepare last week when my brother was visiting and we were running all over town. I use Whole Foods 365 brand marinara sauce and grate my own mozzarella which is MUCH cheaper than buying it grated. Enjoy!

Easy and Quick Lasagna:
Full large jar marinara sauce, divided into quarter amounts
1 lb mozzarella cheese, grated, divided into 4 piles
3/4 cup prepared or homemade pesto
1 pint whole or low fat milk ricotta cheese
16 sheets of short lasagna noodles
In a 9″X13″ Pyrex casserole dish, lay down 4 lasagna noodles.
Take the pesto and stir into the ricotta until it is fully combined. Divide into 4 equal portions.
Take 1/4 of the pesto mixture and place dollops all over the lasagna noodles.
Sprinkle 1/4 of the mozzarella cheese all over the pesto mixture.
Pour 1/4 of the marinara sauce over the cheese layers.
Lay down another layer of the noodles and repeat layers until all the ingredients are used up.
Make sure that you press down the noodle layers so that the noodles are immersed in the sauce so they can get tender,
Bake at 350 degrees for 45 minutes or cover with foil and refrigerate or freeze for later use.
