Alma's Pasta Salad with Greens

P1060873.jpgPot luck season will soon be upon us and it is best to prepared. Try this easy, tasty and healthy salad!

Pasta Salad with Greens

1 1/2 lb pasta such as bowties, farfalle or any other small pasta, (can use whole wheat Barilla brand)
1/2 lb small cubes of queso fresco or other mild cheese like mozzarella
2 cups chopped peppers, I used spicy orange piquillo peppers
3 cups salad greens
1/2 cup any salad dressing-more to taste (make a batch of 1 cup olive oil, 1/3 cup balsamic vinegar, 1-2 TBS honey, salt and pepper to taste)
1 tsp salt
1/4 -1/2 tsp freshly ground pepper

Cook pasta, drain it and let cool.
Add cheese, peppers, salad greens and salt and pepper
Pour on dressing and coat salad and pasta
Enjoy!

P.S. This is great to bring to brunches, BBQs or any other type of potluck
