Take Back the Kitchen with Alma Schneider

P1080133.JPGWouldn't it be nice if your whole family would eat this dish with all its insanely good for you nutrients? Well, if you have picky eaters like I do, just give the orzo with melted cheese and broccoli on the side and you won't have made two completely separate dinners. Enjoy!

Orzo with Kale, Raisins and Goat Cheese:

Serves one but multiply the recipe's ingredients by the number of people who will be eating

1 cup cooked orzo
1/2 cup sauteed, thawed chopped organic kale
1 TBS crumbled goat cheese
1 TBS chopped nuts-I used walnuts
2 tsp raisins
1 tsp coconut oil
slat and pepper to taste

Boil orzo and drain, according to package directions. Let cool.
Sautee up the washed,chopped kale in a tsp of coconut oil.
Add kale to orzo and mix together.
Add the raisins and walnuts and stir in.
Top with crumbled goat cheese
