Last week the School Nutrition Association held their Annual National Conference in Boston, MA. I was lucky enough to attend the conference where I met so many amazing people and learned a ton about providing schools with healthy food. Who knew how much actually goes into getting healthier foods into our kid's schools AND trying to figure out how to educate them to eat it! So many kids across the country are not exposed to different fruits and vegetables at home. Follow me down memory lane... back to when you were little and saw your first magic trick. You didn't really understand it, you couldn't fully explain it, but you know that it amazed you and exceeded all your expectations of what you thought was going to happen. Earlier in the week I received a big bunch of collard greens from my local farm box and I quickly prepped them for cooking later in the week. I sauteed them up tonight and was able to just wash them since most of the hard work was done earlier.
