Easy Pasta Sauce with Take Back the Kitchen
Summer is almost officially here and for some of us, that means a hot kitchen! My friend Hyacinth gave me a great recipe for a flavorful and easy pasta sauce that does not need to be cooked-at all! Everything fresh goes into the food processor which means no pot to clean and more nutrients in the sauce itself. You can pour this over pasta, spaghetti squash or even use as a dip. Best of all, no hot kitchen! Enjoy!
Uncooked Summer Pasta Sauce:
Makes 3 cups
2 1/2 cups tomatoes
12 sun dried tomatoes, soaked
3 dates: pitted and soaked
1/4 cup olive oil
4 cloves garlic
2 tbsp Parsley (save a bit for garnish)
1 tsp sea salt
1/8 teaspoon of Cayenne (red) Pepper (optional)
Place all the ingredients in a food processor fitted with the S-blade and process until smooth.
Pour over pasta or:
Slice a spaghetti squash in half lengthwise and roast at 350 degrees for 45 minutes. Remove from oven and let cool.
When cooled, drag a fork along the cooked squash and pull out all the strands of "spaghetti" and place in a bowl. Serve up the squash , pour sauce over it and garnish with pine nuts if you like.
