IMG_4040.JPG O.K., I admit it; I tried the Paleo (Caveman) diet earlier this month. I gained so much weight over the holiday that I needed to kickstart healthier eating. To my surprise it was easy, healthy and satisfying (except I missed cheese desperately!). This was one of my go-to salads. Enjoy!
Shrimp Avocado and Cashew Salad:
6 -8 cups of dark leafy greens, washed and dried
1/2 cup cooked, medium sized chilled shrimp
1/2 avocado, diced
2 TBS cashew halves
one clementine, sectioned
Dressing:
Drizzle of olive oil
juice of 1/2 lemon
salt and pepper to taste
Combine all salad ingredients, drizzle with olive oil and lemon juice, top with salt and pepper.
