We are entering salad season and I have a delicious one for you! Try this with toast or Pita chips and some greens.
Curried Chicken Salad:
picYDpeph.jpg2 cups chopped, cooked chicken
2 chopped scallions
2 TBS craisins or dried currants
1/4 tsp salt
3/4 tsp curry powder
1 TBS sour cream
1/4 cup light or regular mayo
Mix mayo and sour cream together. Add the curry powder, salt, craisins and scallions to the wet combo. Add in the chopped chicken and coat with the dressing. Chill and serve. Enjoy!
